Gajar Sambharo Recipe, How to make Gujarati Carrot Sambharo

Gajar sambharo recipe or carrot sambharo – A crunchy Gujarati warm salad made by stir-frying carrot and green chilies in mustard. Carrot sambharo also known as “gajar no sambharo” in Gujarati language is a quick and easy side dish prepared by quickly stir frying carrot and green chilies.

There are so many recipes of Gujarati sambharo. The popular ones are cabbage sambharo, green chilies sambharo (marcha no sambharo), raw papaya sambharo, tindora sambharo and ofcourse this carrot sambharo. The main ingredients differs in all these dishes but the technique is same. A quick stir-fried in oil with green chilies, mustard seeds and sometime fenugreek seeds (methi dana) and sambharo is ready. Gujarati sambharo like carrot sambharo is a must in any gujarati thali. As it is such a quick recipe you will always find it being served in lunch in any gujarati household.

This gajar sambharo is a no garlic no onion recipe thus it can be also served along with Jain food. It hardly takes any time to prepare this recipe. Like other gujarati sambharo this carrot sambharo is also under cooked and have a crunchy bite to it.  Lot of people add curry leaves in carrot sambharo but I honestly think that is not necessary.

Step by step recipe of Gujarati Carrot Sambharo with pictures

To make this quick and easy gujarati carrot sambharo or warm salad we will first need to peel off the carrots and grate them. Sometimes people cut the carrots into small small pieces for sambharo. You can cut or grate the carrot as per your convenience.

Now to stir fry the carrots, heat oil in a flat bottom pan and add mustard seeds (rai) once the oil is hot.

Add a pinch of hing (asafoetida) in oil. Hing helps in digestion and hence quite often added in sambharo dishes.

Add the green chilies in oil now. You can slit the green chilies or cut them finely.

Saute the green chilies for few seconds and then add grated carrot.

Mix the carrot and stir fry for 20-30 seconds.

Add turmeric powder (haldi) in the carrot.

Also add salt as per your taste. Stir fry the carrot for 4-5 minutes.

You can add few drops of lemon juice. This is optional so if you don’t have lemon then you can skip this step.

Mix well all ingredients. Let the carrot remains crunchy for this warm carrot salad recipe. Gajar sambharo or carrot sambharo is ready now. Serve gajar sambharo warm or at room temperature along with Gujarati main course dishes like rasawala batata, roti, kadhi and steamed rice.

Gajar Sambharo Recipe - A crunchy warm Gujarati salad of stir fried carrot & green chilies. Best served as side dish along with Gujarati main course.
Ingredients
  • Carrot(gajar): 1 cup
  • Oil:1 tbsp
  • Musted seeds(rai):1/3 tsp
  • Hing:1/4 tsp
  • Green chili: 2 piece chopped
  • Turmeric powder:1/2 tsp
  • lemon juice: 1 tsp
  • Salt:1/3 tsp or to taste
Instructions
  1. Peel off the carrot and grate them using grater. Cut the green chilies into medium pieces.
  2. In a non-stick pan, heat oil and add mustard seeds (rai) once hot.
  3. Once mustard starts fluttering add hing (asafoetida).
  4. Now add the chopped green chili and saute for few seconds.
  5. Then add the grated carrot and mix well all the ingredients and saute for about 1 min.
  6. Add haldi (turmeric powder), salt to taste and give a quick stir and cook for about 5 min.
  7. Once carrot is cooked add few drops of lemon juice and serve carrot sambharo warm.
