Lacha Roti Recipe: Lacha roti or Lachedar roti is a popular Punjabi roti recipe with layers called lacha (or lachcha) prepared from whole wheat flour.
Ingredients
For lacha roti dough
  • Wheat flour: 2 cup
  • Water: 1 cup
  • Oil: 1 tbsp
  • Ajwain (Carom seeds): 1 tsp
For lacha roti or lachedar roti
  • Clarified butter (ghee): 1 tsp
  • Red chili powder: 1 tsp
  • Chaat masala: 1 tsp
  • Wheat flour: 1/2 tsp, for dusting
Instructions
To Make Lacha Roti Dough
  1. In a bowl take 2 cups of whole wheat flour (gehun ka atta) and add a tablespoon of oil and a tsp of carom seeds (ajwain).
  2. Adding little water at a time, start kneading wheat dough for lachcha roti.
  3. Once the dough is ready keep it aside to rest for 10 mins.
  4. Now divide the lacha roti dough into roti/paratha size balls.
To Prepare Lacha Roti
  1. Dust a rolling board with some wheat flour and place a dough ball on it.
  2. Sprinkle some wheat flour and roll into roti size disc. Apple some clarified butter (ghee) on top side.
  3. Sprinkle some red chili powder and some chaat masala powder. Apply very small quantity of wheat flour on the lacha roti.
  4. Using a knife slice the roti from center till one end as shown in picture.
  5. Separate the two cuts and start folding one cut by rolling it slowly across the roti disc.
  6. Keep rolling until the roti dough takes a shape of cone as shown in picture.
  7. As shown in image hold the cone in both hands and start rotating one end like a screw.
  8. Keep rotating until the roti dough forms nice layers. Now press the roti dough against palm and make a flat disc folding all the layers in between.
  9. Using both hands press the roti dough slightly so that it retains the new shape.
To Roast Lacha Roti or Lachedar Roti
  1. Heat a flat bottom non-stick pan or tawa and place the rolled lacha roti on it.
  2. Put the gas on high flame and roast the lacha roti on both the sides till it gets nice golden color.
  3. While roasting gently press with spatula to roast lacha roti evenly.
  4. Lacha roti is ready. Serve lacha roti with Punjabi curries like Palak paneer, paneer tikka masala, aloo palak or Punjabi chole.
