White Dhokla Recipe (Gujarati Idra Recipe) - A tasty Gujarati baked dish made from rice flour and black gram.
For Idra / Idada batter
  • Rice flour: 1 cup
  • Black gram flour (urad dal atta): 1/2 cup
  • Curd: 1/2 cup
  • Water as required
For making Idra
  • Ginger: 1 tsp
  • Green chili: 2 tsp
  • Black pepper: 1 tsp, roughly grinded
  • Soda bi carbonate: 1/4 tsp
  • Salt: to taste
To make Idra batter
  1. Take flour of rice and urad dal in a mixing bowl.
  2. Add curd/yogurt to the flour.
  3. Pour some water and mix it well till batter consistency.
  4. Keep the batter in a warm place and ferment it for 8-10 hours/over night.
To make Idra dhokla
  1. Add finely chopped ginger and green chili in the fermented batter.
  2. Season it with salt . If required add a little water to adjust the consistency of batter.
  3. Take a portion of batter in a separate bowl and add a pinch of baking soda (soda bi-carbonate). Mix it well.
  4. Prepare steam cooker for steaming Idra/Idada .
  5. Grease Idra/Idada plate with oil and pour the Idada batter.
  6. Spread the batter evenly on greased plate.
  7. Sprinkle pepper powder on batter and steam it for 8-10 minutes.
  8. Check if Idada is well cooked by pricking it with a fork/knife.
  9. Repeat the steaming process for rest of the Idada batter.
  10. Cut the steamed Idada into any shape pieces and serve it in a serving plate.
  11. Serve the Idada with garlic and red chili chutney or coriander chutney.
