Gajar Sambharo Recipe (Carrot Sambharo)

- Carrot(gajar): 1 cup
- Oil:1 tbsp
- Musted seeds(rai):1/3 tsp
- Hing:1/4 tsp
- Green chili: 2 piece chopped
- Turmeric powder:1/2 tsp
- lemon juice: 1 tsp
- Salt:1/3 tsp or to taste
- Peel off the carrot and grate them using grater. Cut the green chilies into medium pieces.
- In a non-stick pan, heat oil and add mustard seeds (rai) once hot.
- Once mustard starts fluttering add hing (asafoetida).
- Now add the chopped green chili and saute for few seconds.
- Then add the grated carrot and mix well all the ingredients and saute for about 1 min.
- Add haldi (turmeric powder), salt to taste and give a quick stir and cook for about 5 min.
- Once carrot is cooked add few drops of lemon juice and serve carrot sambharo warm.
