Bharwa Parwal Recipe - A delicious homely recipe of pointed gourd stuffed with gram flour / peanut powder filling & cooked in onion tomato gravy.
Ingredients
Main Ingredients
  • Parwal (pointed gourd): 250 gm
For Stuffing of Bharwa Parval
  • Gram flour (besan): 2 tbsp
  • Peanut powder: 3 tbsp, grounded
  • Turmeric powder: 1/2 tsp
  • Red chili powder: 1 tsp
  • Coriander powder: 1 tsp
  • Garam masala: 1 tsp
  • Sugar: 2 tsp
  • Lemon juice: 1 tbsp
  • Oil: 1 tbsp
  • Salt: 2 tsp or to taste
For Gravy of Bharwa Parwal
  • Tomato: 1 1/2 cup, puree
  • Onion: 1 cup, puree
  • Garlic: 1 tbsp
  • Turmeric powder: 1/2 tsp
  • Salt: 1 tsp to taste
  • Coriander powder: 1 tsp
  • Red chili powder: 1 tsp
  • Oil: 2 tbsp
Instructions
Pre-preparation
  1. Wash and peel off the skin of parwal and slit from center. Remove the seeds from inside.
  2. Grate the onion and tomato and keep aside.
  3. Roast the gram flour (besan).
For Stuffing of Bharwa Parwal
  1. In bowl take roasted gram flour (besan), peanut powder, turmeric powder, red chili powder, coriander powder, garam masala powder, sugar, lemon juice, oil and salt to taste.
  2. Mix well all the ingredients and the filling is ready to fill inside parwal.
  3. Now take the slit parwal and fill the filling inside the parwal.
  4. Repeat and fill remaining parval with filling and keep aside.
  5. Place the stuffed parwal in a steamer and steam for atleast 8-10 minutes until cooked nicely.
To make bharva parwal sabji
  1. In non stick pan heat oil and add cumin seeds. Cook for 1/2 min.
  2. Add the garlic paste and cook for 1/2 min again or till raw flavor of garlic is gone.
  3. Then add grated onion and cook for about 3 min.
  4. Now add tomato paste and other dry Indian spices like red chili powder, coriander powder, turmeric powder, garam masala.
  5. Cook thoroughly until the oil oozes out of the gravy.
  6. Add if any filling mixture is left over in the tomato gravy and stir it.
  7. Add filled parwal to the tomato gravy and cook for about 2 min.
  8. Once all ingredients are mixed well with parwal, sabji is ready to serve.
  9. Serve bharva parval sabji with hot chappati, dal and steamed rice.
